We have been making Elderberry syrup for years from Elderberries gathered from the mountains surrounding our little mountain home. We’ve never used preservatives and found that when we began selling it, the shelf life just wasn’t long enough. Now we offer pre-measured kits complete with the proper amount of elderberries, ginger, cloves, and cinnamon sticks in one jar along with the proper ratio of our local honey in another. Simply boil then simmer the elderberries and herbs in 3.5 cups of water till it reduces by about half. Strain. Add Honey and refrigerate for up to 3 months. It couldn’t be any simpler and the kids will enjoy the feeling of being a little alchemist.
